How to make healthy breakfast pancakes


Hi Guys!

Welcome to my very first blogpost, in which I will give you the recipe for these delicious breakfast pancakes. I love to make pancakes and especially eat them.  Breakfast is my favourite meal of the day and that is probably because of the pancakes I can make at that time of the day.

These pancakes are sugar free and if you want, you can make them dairy free.

Recipe: 
-1 banana
-2 eggs
-1 tbsp cream of tartar
-Pinch of salt -Vanilla pod
-1/4 cup of spelled flour
-1/4 cup of almond flour
-1/4 cup of milk (skip this if you want it to be dairy free)
-1/8 cup shredded coconut (optional)

*I used to bake these pancakes without any kind of flour but I noticed that my pancakes were very mushy and it was hard to flip the little pancakes without ruining them. But it’s ofcoarse possible to skip the flour in this recipe.

I like to mix two different kind of flours because both of them are much healthier then the standard baking flour. Almond flour has also many advantages, such as:
-It contains many healthy fats.
-It is rich in high quality protein, almost 20 grams per 100 grams of almond meal. That’s as much as meat or yogurt.
-It is rich in vitamins B1, B2, B6 and E.
-It contains many minerals: calcium, iron, phosphorus, potassium, magnesium, zinc, copper, manganese, selenium and chromium.
But don’t use to much almond flour because it contains a lot of calories.
Mix all the ingredients in a (smoothie) blender and you’re ready to bake!
Topping:
-Greek yoghurt or agave syrup
-Raspberries
-strawberries
I like to bake my pancakes in coconut oil.
